March is Maple Sugaring Month in New Hampshire and the New Hampshire Maple Producers Association will be hosting the 20th Annual Maple Weekend on March 28 – 29, 2015.

pure maple syrup bottlesSugar makers statewide will be opening their doors to the public and inviting them to  share in the centuries-old craft of maple sugaring. Click here for a list of participating sugar houses. Many will be offering free samples of fresh syrup, as well as samples of maple candies and confections, coffee and doughnuts. Some locations have pancake breakfasts, petting farms and/or horse-drawn rides.

Nutritious and Delicious

Pure New Hampshire maple syrup is a delicious sign of spring and in addition to being a sweet delight it has health benefits as well. “In moderation, pure maple syrup is a healthy alternative to sugar and artificial sweeteners. It’s completely natural and organic, full of vitamins and nutrients and can be substituted for sugar in many recipes.” said Janette Gaumer, registered dietitian at Speare Memorial Hospital.

The sticky goodness of pure maple syrup contains 9 essential vitamins and nutrients; potassium, manganese, magnesium, phosphorus, iron, Vitamins B2, B5 and B6 and has the same calcium levels as whole milk.

Natural Cancer Fighter

It is also full of polyphenols, which are plant-based compounds that work as antioxidants. They protect cells and body chemicals against damage caused by free radicals, reactive atoms that contribute to tissue damage in the body. 

Polyphenols can also block the action of enzymes that cancers need for growth and they can deactivate substances that promote the growth of cancers. Evidence for their role in the prevention of degenerative diseases such as cancer and cardiovascular diseases is emerging. In 2011 researchers at the University of Rhode Island discovered 34 new beneficial compounds in pure maple syrup and confirmed that 20 compounds discovered in preliminary research play a key role in human health.

maple baked oatmeal Maple and Cranberry Oatmeal with Blueberries

A deliciously simple and hearty oatmeal swirled with blueberries, cranberries, pure maple syrup and spices.

Makes 12 servings

INGREDIENTS

9 cups cooked,unsweetened oatmeal
9 Eggs
3/4 cup Skim Milk
1 tablespoon ground cinnamon
3/4 cup pure maple syrup
1/2 teaspoon ground nutmeg
2 1/2 cups fresh blueberries
1 teaspoon grated lemon peel
1 teaspoon lemon juice
3/4 Cup dried cranberries

  1. Preheat oven to 350 degrees and spray a baking dish with cooking spray.
  2. In a bowl, beat the eggs for 2 minutes. Stir in the milk, maple syrup and spices.
  3. Stir the cooked oatmeal into the egg mixture to moisten and add the cranberries.
  4. Stir in the lemon zest and juice.
  5. Fill your sprayed baking dish with the oatmeal mixture  and top the center with the blueberries. Lightly swirl the blueberries into the oatmeal leaving a few on top.
  6. Bake at 350 for 20 minutes
